🫖 Madness of Flavors and Colors in Morocco

I won't lie, I returned from Morocco a few pounds lighter. I don't eat meat, and in Morocco, almost every dish includes it. I went with the hope of finding plenty of legumes, but to my surprise, there were very few :(, so I relied on vegetables and the occasional omelette for breakfast for 8 days.
In the places I visited, there was little variety of raw materials, and that's just how it is. You'll find the same dishes in almost every restaurant: Tagine, tagine, tagine, and more tagine. For those who don't know, tagine is a typical Moroccan dish cooked in a clay pot of the same name. Fortunately, in several places, they served tagine with vegetables only. Although I'm sure the broth had meat, well, you have to eat too! 😋
Apart from tagine, typical breakfasts were another distinctive element. Wherever you go, they're all the same: bread, jam, egg, a typical crepe, and pastries. If you're not used to this, my friend, stop by a supermarket beforehand to stock up! Although I enjoyed the first few breakfasts, loving to try things from the places I visit, by the fourth day, I didn't want anything to do with breakfast anymore.

The terrace is beautiful, the service very good, and the food a variety I wasn't used to. Definitely, gastronomically, Marrakech is the best. Unfortunately, we had a few days to enjoy it.
And now, the best part. As I mentioned, Morocco didn't surprise me with its variety of dishes, but what is diverse is the spices, of all colors, scents, and mixes you can imagine. Please, don't miss the typical lab inside the soko in La Medina, where they want to sell you everything: spices, natural cosmetics, etc. Take all the spices you can; they are the best.
I leave you with 5 essential Moroccan spices:
Cinnamon
Saffron
Turmeric
Cumin
Ginger
And finally, don't forget to try Ras el Hanout. I can't stop cooking with this spice blend. It's basically all of Morocco's spices in one. I've tried to find the exact mix, but believe me, it's a secret spice blend because I've never been able to reproduce it.
